This is a recipe I was given in a binder for my wedding by
two lovely sisters, and this particular one is from Julie (with a few tips added by me).
You will need:
2 cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
1 teaspoon salt*
1 cup sugar
3 over-ripe bananas
¼ cup butter or margarine
2 eggs
1 cup chocolate chips
What you do:
1. Heat oven to 350 F.
2. Combine and mix all ingredients together in a
large bowl.
TIP: mix dry ingredients (flour, bp, bs, & salt)
together and wet (bananas, margarine, eggs, & sugar**) together separately, then
combine. Add chocolate chips very last.
3.Place batter in a greased bread pan OR muffin
tins
TIP: my mom suggested using parchment paper on
the bottom and sides to prevent them from getting to dark (banana bread is
tricky to bake all the way through without dark sides)
4. Bake 1 hour or until wooden toothpick inserted
into the middle comes out clean
5.Cool for about 15 minutes then remove from pan.
(Wearing oven mitts, place right hand over top of the loaf, use left hand to
flip it upside down so the loaf falls into right hand.) Complete cooling on a
wire rack before slicing.

*optional, I never add salt to any baking anymore and I
don’t find a difference.
**yes add sugar to the wet ingredients (it
dissolves).
